Sweet and Sour Chicken

So continuing on my quest to try a new recipe each week, tonight I made Sweet and Sour Chicken adapted from a recipe found on pinterest (stolen from Mels Kitchen Cafe) I was a little nervous by the simplicity of the ingredients, but I enjoyed it more than many i've eaten in restaurants, so all in all - it makes it to the Caroline Express collection!

Chicken Breading:
3-5 chicken breasts
salt and pepper
1/2 cup cornstarch
2 eggs, beaten
4 tablespoons canola oil

Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper. Dip chicken into cornstarch and coat all the way and then into eggs. Heat oil in large skillet. Cook chicken until browned. Place on baking sheet.

Sauce:
3/4 cups sugar
4 Tablespoons ketchup
1/4 cup Rice Wine vinegar
1 Tablespoon soy sauce
1 teaspoon garlic salt

Whisk until smooth. Then pour evenly over chicken. Turn chicken so the sauce gets on both sides and then put in the oven at 350 degrees for 15 minutes. After 15 mins, turn chicken, add pineapple and red peppers and then cook for 15 more minutes.
