I loved the recipe I tried this week - Jamie Oliver's Gingered Chicken with Noodles, it's slightly sweet sauce is just perfect against the freshness of the ginger and chilli. Obviously - I will be removing the Coriander next time (as - along with celery it's my arch nemesis!) I added broccoli to the dish and loved it. There are lots of other tweaks to this recipe included below - so apologies to Jamie - I've changed the proportions of chicken to noodles to sauce and feel that it's an improvement. Lastly Jamie suggests it takes 4 minutes 41 seconds to create - I took me 15 minutes from inception to plate, so three times slower - but still a very speedy and favourful meal that doesn't break the bank or the diet sheet.
Jamie Oliver's Ginger Chicken with Noodles - (Jamie's Dinners)
1 Package of Noodles Serves 4
2 tablespoons Oil
2 Chicken Breasts sliced thinly into strips
Ginger (about a thumb sized piece) peeled & thinly sliced
1 red chilli - deseeded & finely sliced
1 tsp Five Spice
3 Spring Onions
Soy Sauce (a dash)
1 tablespoon Honey
Coriander (small handful roughly chopped) ---> Not for me! Substitute Broccoli next time.
Salt & Pepper
Broccoli
Drop the noodles into boiling water and cook to package instructions (adding the Broccoli if desired approx 3-4 mins before close of cooking time).
Finely chop the Ginger, Chilli's and Chicken Breasts (into strips) and add to a hot pan with the oil added. Allow the chicken to brown and the ginger to crisp slightly.
Add five-spice seasoning (1/4 tsp Fennel Seeds, 1/4 tsp Cinnamon, 1/4 tsp Cloves 1/4 tsp Peppercorns - ground together)
Once chicken is browned and seasoning coating it, add the spring onions, soy sauce and honey, allow to thicken slightly on a medium heat.
Drain the noodles and broccoli and add with the coriander to the chicken, toss with tongs, season with salt and pepper and serve immediately.
