These muffins are absolutely delectable - though they caused quite a mess on the bottom of the oven!!! The original recipe called for regular sized cups filled to the top - but this yielded quite the mess - substitute Jumbo cups and 2/3 filled with batter allowing for the sticky crumble to form in the top of each case. So good, perfect way to have an Apple-a-day!
Apple Cinnamon Crumble Muffins
1-1/2 cups white sugar
1 teaspoon salt
1 tablespoon + 1 teaspoon baking powder
3 teaspoons ground cinnamon
1 cup vegetable oil
2 egg
1 cup milk
4 apples - peeled, cored and chopped
1 cup white sugar
2/3 cup all-purpose flour
1 cup butter, cubed
1 tablespoon ground cinnamon
Preheat oven to 400 degrees F .
Line twelve JUMBO
muffin cups
Stir together flour, sugar, salt, baking
powder and teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon
batter into prepared muffin cups, filling 2/3 of the cup.
In a small bowl, stir together 1 cup sugar,
2/3 cup flour, butter and 1 tablespoon cinnamon. Mix together with fork and
sprinkle over unbaked muffins. Bake for
20 to 25 minutes.
